Vegan Nachos 

Raw Vegan Nachos -Spicy Chipotle SuperMix 1

Boost Your Nachos with Spicy Chipotle SuperMix!

   Ingredients

        • 2 English Cucumbers

        • ½ Cup Mushrooms

        • 1 Large Tomato

        • ¼ Red Onion

        • 2 Garlic Cloves

        • 2 Limes ­– Juiced

        • ½ Avocado

        • ¼ Cup Sliced Olives

        • ⅓ Cup Cilantro

        • 1 Bag of Sol-ti Spicy Chipotle SuperMix


For the Raw Vegan Cheese

        • ¼ Cup Raw Cashew Butter

        • 1 tsp Paprika

        • 1 tsp Garlic Powder

        • 1 tsp Onion Powder

        • 1 TBSP Lemon Juice

        • 2 TBSP Nutritional Yeast

        • 3 TBSP Water

        • ½ tsp Sea Salt

  Instructions

1. Begin by making the raw vegan cheese. Combine all

the vegan cheese ingredients together in a blender and

blend until silky smooth.


2. Dice the tomato and onion and mince the garlic. 

Combine them in a small bowl with the lime juice and 

set aside.


3. Slice the cucumbers and mushrooms into thin slices 

and assemble on a plate. Dice the avocado, slice the 

olives and place on top of the cucumbers. Pour the 

vegan cheese on top and add the tomato mixture. 

Top with fresh cilantro and Spicy Chipotle SuperMix. 

Serve right away!
