   Ingredients

For the salad:

        • 4 Cups Arugula

        • 1 English Cucumber

        • 1 Avocado

        • ½ Head Of Cauliflower

        • 2 Medium Carrots

        • ½ Cup Sprouts of choice


For The Dressing:

        • ⅓ Cup Tahini

        • 1 Bottle of Sol-ti CLARI-TI SuperShot

        • 3 TBSPs Lemon Juice

        • 1 TBSP Maple Syrup

        • 1 Clove Garlic (Minced)

        • 1 tsp Sea Salt

        • ¼ tsp Black Pepper

        • 1 TBSP Dijon Mustard

        • ¼ tsp Blue Spirulina - for added color (Optional)

  Instructions

1. Prepare the Salad:

        • Arugula: Wash and dry the arugula, then place it in a large salad bowl.

        • Cucumber: Slice the cucumber into thin rounds or half-moons.

        • Avocado: Dice the avocado into bite-sized pieces.

        • Cauliflower: Chop the cauliflower into small florets.

        • Carrots: Julienne or shred the carrots.

        • Sprouts: Rinse the sprouts and set aside.


2. Combine the Salad:

        • Add the sliced cucumber, diced avocado, cauliflower florets, and julienned carrots to the bowl with the arugula.

        • Top with the sprouts.


3. Prepare the Dressing:

        • In a small bowl, whisk together the tahini, CLARI-TI SuperShot, lemon juice, maple syrup, minced garlic, sea salt, black pepper, and Dijon mustard.

        • If using, add the blue spirulina for a pop of color.

        • Whisk until the dressing is smooth and well combined. If the dressing is too thick, add a little water, one tablespoon at a time, until you reach your desired consistency.


4. Dress the Salad:

        • Pour the dressing over the salad.

        • Toss gently to ensure all the ingredients are evenly coated with the dressing.


5. Serve:

        • Serve the CLARI-TI SuperFood Salad immediately.
