Pie Energy Bites

Boost Your Energy Bites with Sol-ti CLARI-TI SuperShot!

   Ingredients

For the Energy Bites:     
       • 1 Cup Walnuts
       • 1 Cup Almonds ​​ ⁠
       • 1 Cup Pitted Dates
       • 1 Cup Dried Blueberries
       • ½ tsp Vanilla Bean, Scraped

For the Icing:
       • 1 tsp Salt
       • 1 Bottle Of Sol-ti Clari-ti Supershot
       • ½ Cup Cashews
       • 1 ½ Cup Water
       • Shredded Coconut
       • Optional 1-2 Tbsp Maple Syrup (adjust to desired sweetness)

  Instructions

1. Add all energy bite ingredients to a food processor and pulse until a smooth “dough” forms. ⁠ 


2. Roll into balls, place evenly on a tray or plate and put in the fridge for at least an hour. 


3. For the icing, blend all ingredients, except shredded coconut, untilsmooth, adding more water if needed depending on desired consistency. 


4. Spoon a small amount of icing over the top each energy bite and topwith shredded coconut. 


5. Place back in the fridge for another hour or longer to set the icing. ⁠
