Sol-ti Curry

Collard Wraps

   Ingredients

       • 4 Large Collard Leaves
       • 1 Small Head of Cauliflower
       • 1 Firm Sweet Apple such as Fuji
       • ⅓ Cup Raisins
       • 1 tbsp Curry Powder
       • ½ Cup Raw Cashews
       • 2 Medium Carrots
       • ½ Cup Chopped Celery
       • 1 Bottle of Sol-ti TURMERIC SuperShot
       • Pinch of Sea Salt
       • 1 Medjool Date

  Instructions
1. Begin by roughly chopping the cauliflower into small pieces, dicing the apple, and shredding the carrots. 

2. Add all ingredients to a food processor and pulse until everything is finely chopped. Make sure to pulse and not constantly process to achieve a “rice” texture. 

3. Use a knife to thin down the stems of the collards (do not cut the stem completely, just enough so that you’ll be able to roll the greens). 

4. Scoop the curry filling into the wraps and roll like you would a burrito.

Serve and enjoy!
