Sol-ti Tropical Vegan Ceviche

Ingredients

  • 3 Cups Fresh Hearts of Palm
  • 2 Avocados
  • 5 Roma Tomatoes
  • ½ Red Onion
  • ⅓ Cup Cilantro
  • 1 Bottle of Sol-ti SUPERBOOST™ SuperShot®
  • 1 Lemon

Instructions

1. Prepare the Ingredients:

  • Slice the hearts of palm into bite-sized pieces.
  • Dice the avocados and roma tomatoes. 
  • Finely chop the red onion.
  • Chop the cilantro.

2. Combine Ingredients:

  • In a large mixing bowl, combine the hearts of palm, diced avocados, roma tomatoes, red onion, and cilantro.

3. Add the Dressing:

  • Pour the SUPERBOOST™ SuperShot® over the mixture.
  • Squeeze the juice of 1 lemon over the ingredients.

4. Mix the Ceviche:

  • Gently toss all the ingredients together until they are well combined and evenly coated with the dressing.

5. Chill (Optional):

  • For a more refreshing experience, you can refrigerate the ceviche for about 15-30 minutes before serving.

6. Serve:

  • Divide the ceviche into four servings.
  • Optionally, garnish with extra cilantro or a slice of lemon.

7. Enjoy:

  • Serve immediately and enjoy your flavorful and refreshing Raw Vegan Ceviche!
