Sol-ti Strawberries and Cream Chia Seed Pudding

This pudding is a grounding, restorative way to support sustained energy and digestive health through whole, nutrient-dense ingredients. Chia seeds deliver omega-3 fatty acids, fiber, and plant-based protein — slowing digestion, steadying blood sugar, and promoting lasting fullness. Coconut milk provides healthy MCTs that the body converts to quick, clean energy. 

Stirred in at the heart of this pudding, Sol-ti Strawberry Lemon SuperStix® contributes organic cold-pressed lemon and electrolytes that support immunity and electrolyte balance throughout the day. Fresh strawberries add a vibrant layer of vitamin C and natural sweetness — completing a treat that feels indulgent but works hard for your body. 


Ingredients

  • 1½ Cups Fresh Coconut Milk (the Creamier, the Better)
  • ⅓ Cup Chia Seeds
  • ½ tsp Vanilla Bean Powder
  • 2 TBSPs Maple Syrup
  • 1 Stix of Sol-ti Strawberry Lemon SuperStix®
  • ½ Cup Diced Strawberries (for layering or topping)

Instructions

1. Mix ingredients

  • In a bowl or jar, whisk together the fresh coconut milk, chia seeds, vanilla bean powder, maple syrup, and Strawberry Lemon SuperStix® until fully combined.
  • Let the mixture sit for 5 minutes, then stir again to prevent clumping.

2. Chill and set

  • Cover and refrigerate for at least 2–4 hours, or overnight, until thick and creamy.

3. Add toppings

  • Once set, give it a good stir and layer with diced strawberries or add them on top.

4. Serve

  • Serve chilled and enjoy.
