Sol-ti Spicy Cucumber Salad

Ingredients

  • 10-12 Persian Cucumbers
  • 1 Bottle of Sol-ti GINGER SuperShot®
  • 2 TBSPs Coconut Aminos
  • 1 TBSP Maple Syrup
  • ½ tsp Red Pepper Flakes
  • ½ tsp Dried Garlic Flakes
  • 1 tsp Sesame Seeds
  • 1 tsp Sesame Oil

Instructions

1. Prepare the Cucumbers

  • Wash the Persian cucumbers thoroughly
  • Using chopsticks as a guide, carefully cut the cucumbers in a spiral noodle pattern by making diagonal slits on one side, then flipping and cutting straight slits on the other side.

2. Make the Dressing

  • In a small bowl, whisk together the GINGER SuperShot®, coconut aminos, maple syrup, red pepper flakes, dried garlic flakes, and sesame oil.

3. Assemble the Salad

  • Place the spiral-cut cucumbers in a large bowl.
  • Pour the dressing over the cucumbers and toss gently to coat.

4. Garnish & Serve

  • Sprinkle sesame seeds over the salad for added texture.
  • Let it sit for 5-10 minutes to absorb the flavors before serving.
