Ingredients
• 1 Cauliflower
• 1 8oz Container Mushrooms of choice
• 1 Bell Pepper
• 1 Broccoli Crown
• 1 Handful Snow Peas
• 1 Pineapple
• 1 Bottle of Sol-ti SUPERBOOST™ SuperShot®
• 1-2 TBSPs Coconut Aminos
• 1 TBSP Maple Syrup
• Sesame Seeds
• Red Pepper Flakes
• Lime Juice
Instructions
1. Prepare the Cauliflower Rice:
- Cut the cauliflower into florets and pulse them in a food processor until theyresemble rice grains. Set aside.
2. Prepare the Vegetables:
- Slice the mushrooms, bell pepper, and broccoli crown into thin strips or bite-sized pieces.
- Remove the stems from the snow peas and slice them diagonally.
- Cut the pineapple in half and scoop out the inside into bite-sized chunks.
3. Make the Teriyaki Sauce:
- In a small bowl, whisk together the SUPERBOOST™ SuperShot®, coconut aminos, maple syrup, and a squeeze of lime juice. Adjust the sweetness and tanginess to taste.
4. Assemble the Bowls:
- Divide the cauliflower rice among serving bowls.
- Arrange the sliced mushrooms, bell pepper, broccoli, snow peas, and pineapple on top of the cauliflower rice.
5. Drizzle with Teriyaki Sauce:
- Drizzle the prepared teriyaki sauce over the vegetables in each bowl.
6. Garnish and Serve:
- Sprinkle sesame seeds and red pepper flakes over the bowls for added flavor and spice.
- Squeeze a little extra lime juice over the top if desired.
- Serve the Raw Vegan Teriyaki Bowls immediately, and enjoy!
