Sol-ti Raw Vegan Lemon Blueberry Cobbler

Ingredients

For the Crumble:

  • 1 Cup Sprouted Oat Flour
  • ¼ Cup Pure Maple Syrup
  • 1 tsp Lemon Zest
  • ½ tsp Vanilla Bean Powder

Instructions

1. Prepare the Blueberry Filling:

  • In a mixing bowl, combine the thawed blueberries, Wild Blueberry SuperAde®, and maple syrup. Gently toss until the blueberries are coated.
  • Pour the blueberry mixture into a small serving dish or pie plate, spreading evenly.

2. Make the Crumble:

  • In a separate bowl, combine the sprouted oat flour, maple syrup, lemon zest, and vanilla bean powder. Mix until the crumble mixture forms a coarse, crumbly texture.

3. Assemble the Cobbler:

  • Sprinkle the crumble mixture evenly over the blueberry filling.

4. Chill and Serve:

  • Let the cobbler sit in the fridge for at least 30 minutes to allow the flavors to meld.
  • Serve chilled for a refreshing, raw vegan dessert!
