Ingredients
Cookies:
- 1 Cup Medjool Dates
- 1 Cup Raw Cashews
- ¼ Cup Fresh Cranberries
- 1 TBSP Orange Zest
- 1 tsp Vanilla Bean Powder
Icing:
- ⅓ Cup Raw Coconut Butter
- 1 Bottle of Sol-ti TURMERIC SuperShot®
- 2 TBSPs Pure Maple Syrup
- Orange Zest, for garnish
Instructions
1. Blend the base
- Add dates, cashews, cranberries, orange zest, and vanilla bean powder to a food processor. Blend until a sticky dough forms.
2. Shape
- Roll the mixture into small balls or flatten into cookie shapes. Place on parchment paper and chill in the fridge or freezer for 15–20 minutes.
3. Make the icing
- In a small bowl, whisk together coconut butter, TURMERIC SuperShot®, and maple syrup until smooth.
4. Decorate
- Spread or drizzle the icing over each cookie and top with fresh orange zest.
