Sol-ti Raw Vegan Cranberry Orange Cookies

Ingredients

Cookies:

  • 1 Cup Medjool Dates
  • 1 Cup Raw Cashews
  • ¼ Cup Fresh Cranberries
  • 1 TBSP Orange Zest
  • 1 tsp Vanilla Bean Powder

Icing:

  • ⅓ Cup Raw Coconut Butter
  • 1 Bottle of Sol-ti TURMERIC SuperShot®
  • 2 TBSPs Pure Maple Syrup
  • Orange Zest, for garnish

Instructions

1. Blend the base

  • Add dates, cashews, cranberries, orange zest, and vanilla bean powder to a food processor. Blend until a sticky dough forms.

2. Shape

  • Roll the mixture into small balls or flatten into cookie shapes. Place on parchment paper and chill in the fridge or freezer for 15–20 minutes.

3. Make the icing

  • In a small bowl, whisk together coconut butter, TURMERIC SuperShot®, and maple syrup until smooth.

4. Decorate

  • Spread or drizzle the icing over each cookie and top with fresh orange zest.
