Sol-ti Pumpkin Overnight Oats (High-Protein, High-Fiber, Plant-Based)

Ingredients

  • 2 Cups Sprouted Oats
  • ½ Cup Pumpkin Purée
  • 1 TBSP Ground Flaxseed
  • 2 TBSPs Chia Seeds
  • 1 tsp Ground Cinnamon
  • ½ Cup Coconut Yogurt + extra for serving
  • 1 Bottle of Sol-ti TURMERIC SuperShot®
  • 1 ½ Cups Fresh Coconut Milk
  • 2 TBSPs Maple Syrup
  • 2 TBSPs Pumpkin Seeds, for garnish

Instructions

1. Mix the dry ingredients

  • In a medium bowl or jar, combine the sprouted oats, ground flaxseed, chia seeds, and cinnamon.

2. Add the wet ingredients

  • Stir in the pumpkin purée, coconut yogurt, TURMERIC SuperShot®, fresh coconut milk, and maple syrup until everything is well combined and creamy.

3. Chill overnight

  • Cover the bowl or jar and place it in the refrigerator for at least 4 hours, preferably overnight, to thicken.

4. Serve

  • Give the oats a good stir, add a splash of milk if needed, and top with extra coconut yogurt and pumpkin seeds before serving.
