1. Blend the Ingredients

  • In a food processor, combine raw cashews, pitted Medjool dates, vanilla bean powder, and lemon zest.
  • Blend until the mixture forms a sticky dough that holds together when pressed.

2. Adjust Consistency

  • If the mixture is too thick, add a splash more coconut water and blend again.
  • If you prefer a sweeter drink, add a little more maple syrup to taste.

3. Serve

  • Pour the frozen mocktail into a chilled glass.

4. Garnish & Enjoy

  • Optionally, garnish with a slice of fresh beet, a sprig of mint, or a twist of orange.
  • Serve immediately and enjoy this refreshing, antioxidant-packed drink!
