Instructions
1. Blend the Ingredients
- In a food processor, combine raw cashews, pitted Medjool dates, vanilla bean powder, and lemon zest.
- Blend until the mixture forms a sticky dough that holds together when pressed.
2. Adjust Consistency
- If the mixture is too thick, add a splash more coconut water and blend again.
- If you prefer a sweeter drink, add a little more maple syrup to taste.
3. Serve
- Pour the frozen mocktail into a chilled glass.
4. Garnish & Enjoy
- Optionally, garnish with a slice of fresh beet, a sprig of mint, or a twist of orange.
- Serve immediately and enjoy this refreshing, antioxidant-packed drink!
