Ingredients
- 4 Large Collard Leaves
- 1 Small Head of Cauliflower
- 1 Firm Sweet Apple such as Fuji
- ⅓ Cup Raisins
- 1 tbsp Curry Powder
- ½ Cup Raw Cashews
- 2 Medium Carrots
- ½ Cup Chopped Celery
- 1 Bottle of Sol-ti TURMERIC SuperShot®
- Pinch of Sea Salt
- 1 Medjool Date
Instructions
1. Prepare the Vegetables
- Begin by roughly chopping the cauliflower into small pieces, dicing the apple, and shredding the carrots.
2. Make the Curry Filling
- Add all ingredients to a food processor and pulse until everything is finely chopped. Make sure to pulse and not constantly process to achieve a “rice” texture.
3. Assemble the Wraps
- Use a knife to thin down the stems of the collards (do not cut the stem completely, just enough so that you’ll be able to roll the greens).
- Scoop the curry filling into the wraps and roll like you would a burrito.
