Sol-ti Curry Collard Wraps

Ingredients

  • 4 Large Collard Leaves
  • 1 Small Head of Cauliflower
  • 1 Firm Sweet Apple such as Fuji
  • ⅓ Cup Raisins
  • 1 tbsp Curry Powder
  • ½ Cup Raw Cashews
  • 2 Medium Carrots
  • ½ Cup Chopped Celery
  • 1 Bottle of Sol-ti TURMERIC SuperShot®
  • Pinch of Sea Salt
  • 1 Medjool Date

Instructions

1. Prepare the Vegetables

  • Begin by roughly chopping the cauliflower into small pieces, dicing the apple, and shredding the carrots.

2. Make the Curry Filling

  • Add all ingredients to a food processor and pulse until everything is finely chopped. Make sure to pulse and not constantly process to achieve a “rice” texture.

3. Assemble the Wraps

  • Use a knife to thin down the stems of the collards (do not cut the stem completely, just enough so that you’ll be able to roll the greens).
  • Scoop the curry filling into the wraps and roll like you would a burrito.
