Sol-ti Broccoli Crunch Salad

Ingredients

Salad:

  • 2-3 Broccoli Crowns
  • ½ Red Onion
  • 3 Celery Ribs
  • 1 Cup Shredded Carrots
  • 2 Firm Apples (Fuji is a great variety)
  • ½ Cup Dried Cranberries
  • ½ Cup Raw Pecans
  • ⅓ Cup Raw Sunflower Seeds

Dressing:

Instructions

1. Prepare the Vegetables

  • Begin by preparing the vegetables. Break the broccoli crown into small pieces, finely dice the onion, dice the apple into bite-sized pieces, and slice the celery.
  • Add the prepared vegetables and the dried cranberries, pecans, and sunflower seeds to a large bowl.

2. Make and Add the Dressing

  • In a small bowl combine the dressing ingredients together and whisk until smooth.
  • Pour the dressing over the salad and toss until combined.
