1. Add all energy bite ingredients to a food processor and pulse until a smooth “dough” forms.
2. Roll into balls, place evenly on a tray or plate and put in the fridge for at least an hour.
3. For the icing, blend all ingredients, except shredded coconut, until smooth, adding more water if needed depending on desired consistency.
4. Spoon a small amount of icing over the top each energy bite and top with shredded coconut.
5. Place back in the fridge for another hour or longer to set the icing.
